The Cacao Pot
Dark, deep and quietly complex. A meeting of cacao and cashew that asks nothing of you except time.

The Chorizo
A parcel of rice paper sealed around chorizo and wilted greens, crowned with a slow-baked egg and dusted in our seed blend. Vivid. Unapologetic. Served with dressed leaves.

The Forest
The quiet version. Chestnut and white mushrooms roasted deep with cumin and thyme, folded and sealed, baked until the outside shatters and the inside gives. Something that tastes more complex than it announces.

The Sunshine
Tender sweet potato thins at the base — the surprise is its crunch. Labneh for a gentle salt. Heritage tomato for brightness. A Spanish dressing that ties everything together like light through leaves.

The Small
For when you want something real, but not a production.

The Muffin
Eaten with a spoon. Light as a thought, seeded on top. More soufflé in spirit than anything else.

The Pod
Draped in toasted sesame, soy and a whisper of garlic. The kind of thing you order for the table and finish alone.

The Jewel
One royal date. Filled with crunchy almond butter — a surprise at the centre. Dipped in 85% dark chocolate, a whole almond pressed on top, finished with a flake of sea salt.

The Verdant
Small, vivid, green. Made from the earth up — ground almond, medjool date, matcha and cacao nib, rolled by hand. Two come. Neither stay long.

The Hush
Set slow, baked soft. A texture that exists somewhere between a dream and a memory — yielding, just sweet enough, finished with whipped yoghurt cream and whatever fruit the season insists on.

The Levant
A luscious, unapologetically rich dark chocolate mousse drawn into new territory by light tahini and maple. Crowned with crushed halva and toasted sesame — a Levantine flourish that makes the whole thing sing. The conversation will pause. That is the point.

The Ruby
It arrives in a wine glass. You will assume you know what it is. You will be wrong. And then you will be delighted. Pure organic beetroot, pressed and poured. Nothing added. Nothing taken away. The colour of something ancient and alive.
